Creative use of leftover mashed potatoes

Last night we had breakfast for dinner. I used some of my bread from my bread store deal to make french toast. I also had leftover mashed potatoes and was trying to figure out a creative way to use them up. Pancakes and mashed potatoes didn't exactly sound appealing. I thought hash browns sounded good and figured that grated potatoes can't be that different from mashed potatoes. I added an egg, a couple tablespoons of flour, and about 1/4 c. of finely chopped onion to my mashed potatoes, sort of made patties out of them (as best I could) and I dropped them into a little bit of hot oil in a skillet. They weren't very pretty, but they tasted really good! They were gobbled up by my husband and kids.

We had enough leftovers this morning that the kids had french toast and potato pancakes for breakfast.

My frugal happenings today:

Not going anywhere--saves gas!

Cut Andy's hair.

Made a batch of laundry soap.

Breakfast was homemade banana muffins. I prep all the dry ingredients the night before to save time. I bought a bunch of brown bananas for 0.29/lb. at Save a lot to use for this purpose.

Dinner tonight is bubble and squeak, using only 1 leftover pork chop from dinner last night and a few other cheap ingredients (cabbage, a couple of potatoes and onion). Ethan has a baseball game tonight, so I'm planning an early dinner (avoiding fast/convenience food).

Made plans to get together with friends for a playdate tomorrow at a park.

Last night Ethan's school hosted "Family Fitness Night". I was hoping that Family Fitness Night would entail dinner that Mom didn't have to cook, but alas, no food this time. We decided to eat leftovers for dinner before we left for school. We had a good time acting goofy with the kids--found out that my husband really sucks at Dance, Dance Revolution, lol :)

Tonight I'm making chicken fettuccini alfredo. I made fettuccini alfredo without the meat in my last menu cycle, but I still had enough heavy cream for another meal, so we're having it again. I bought the chicken breast with the B1/G2 deal that Albertson's had last week. I don't think anyone will mind eating it again. :)

How far can you stretch one on-sale chicken?

I bought whole chickens at Kroger for 69 cents/lb. On Thursday, Michael roasted one and served it with mashed potatoes and salad. On Friday, the kids ate leftover chicken and potatoes for lunch. Today I picked off every little tiny bit of chicken that I could get off of it, and I mixed it up into chicken salad.

We all had chicken salad sandwiches and fruit for lunch. Then I threw the bones into the crock pot to make chicken stock.

I also keep a ziploc bag in the fridge with bits of onion, carrots, and celery leaves--I throw that in with my stock. Since it's summer, I don't need the stock for soup. I do make a lot of casseroles though. Here is a recipe so you don't have to buy cream soups for casseroles, and it uses chicken stock.

Cream of Anything Soup:
1/2 c. milk
1/2 c. chicken stock/broth (made from the leftovers of one $3 chicken!)
3 tbsp. butter (can be cut down)
3 tbsp. flour
s&p to taste

Melt the butter in a skillet, add the flour to make a roux. Slowly add the stock/milk, and whisk until it thickens up. This can be used in place of any recipe that calls for a cream soup. If you don't want the little bit of chicken flavor, you can use all milk and omit the stock.
